One quarter (approx. 80 pounds, depending on the bison) mirrors the cut breakdown of a full bison, which is half ground plus a quarter roasts and a quarter steaks.

• 20 pounds steaks (including ribeye,  tenderloin, and top sirloin)
• 20 pounds roast (including chuck and short ribs)
• 36 pounds ground bison
• 4 pounds bison sausage

Please note: We do not ship meat. Our ranch pop-up store at the North Green Valley Road and Hwy. 46 junction (just outside Cambria) is open Saturdays from 11 a.m. to 3 p.m.
