Bison Tenderloin Steaks

Bison tenderloin is sweet and soft as butter - the best meat you'll ever taste. After eating tenderloin for Christmas dinner recently, Susannah's mother said: "I've been dreaming about it." These steaks come in 2-packs, and price is per-pound.

When we were pre-selling our first bison harvest this fall, the tenderloins sold out on Day One - so if you want one of these premium cuts grab it now!

After a quick hot sear, cook these 2-inch steaks as low and slow as you can. What you want to achieve is an even medium rare all the way through. Remember, you can't UNcook, so while experimenting don't worry about undercooking. If it's too raw, throw it back on the heat.
